Mariah’s Favorite Salads for Summer

A couple weeks ago I promised I would share some of my favorite recipes and healthier substitutes to key ingredients.  As promised, I have listed my favorite recipes, which are easy and quick to make.  You can find all these recipes on the blog, making them even easier to enjoy. I have also provided my favorite salad dressings.

As you may already know, salad dressings can have a lot of calories.  One tablespoon of salad dressing can have between 70-100 calories.  A great substitute to salad dressing is apple cider vinegar.  This ingredient only has 3-5 calories per tablespoon.  Another great option is lemon juice, which only has 3 calories per tablespoon.  Both ingredients are healthier than your average salad dressing. In addition choosing healthy fatty oils, like olive oil and avocado oil provide your essential fatty acids.

The Sweet & Savory Kale Quinoa Salad asks for apple cider vinegar and olive oil.  This recipe is also a great option for those craving sweets.  It calls for apples, dried tart cherries, and a little honey, which provides a natural sweet flavor and curbs your sweet tooth. The Lemon Arugula Pasta Salad is another favorite.  It is a light and simple pasta with an easy lemon pepper dressing using fresh lemon juice.

If you are looking for a thicker salad dressing, check out the Vegan Creamy Caesar Dressing.  Most Caesar dressings are made with egg yolks, corn syrup, and cheese, which are high in calories.  The Vegan Creamy Caesar salad dressing has half the calories and a higher nutritional content.  The dressing calls for apple cider vinegar, olive oil, and Dijon mustard.  The nutritional yeast provides the thickness you are looking for and that cheesy creamy flavor.

There are too many great recipes to share so I have decided to share more recipes next time.  I will focus on my favorite snacks.  Let me know if you try these delicious recipes!!
