Happy Monday folks!! Really all days of the week feel the same to me. So, I don’t dislike Mondays because it feels like Tuesday or Wednesday to me. Now that I have a child, who isn’t in school yet, all days kind of meld together. I don’t get to enjoy slow Sundays any more and don’t stay up later on the weekends, because I don’t really have the option of sleeping in.
It’s totally worth it though. The little miss has changed my life, even if it means no more sleeping in, at least for a few more years that is. Little R is an amazing sleeper and she’ll be 15 months later this week. Crazy how time flies. So for now I live in fast forward it seems and lately cooking has been in fast forward.
I wanted to share an oldie, but goldie recipe of mine. I made them last week, because I needed an extra protein kick for the mornings and afternoons, and wanted something simple. I was going through old recipes and thought I would share this one, and update some of the photos. I have come to realize that my photography skills have improved since I started this blog nearly 3 years ago, and some of you may still think they still need a lot of work. Also, true.
Raw Peanut Butter Chia Seed Bites
These were one of the first recipes I added to the blog and one of my first healthy bites or protein bites I made. Nothing out of the ordinary and simple ingredients, but sometimes simple is better. Both vegan and gluten free
I love to have healthy snacks on hand for when I need something to munch on ASAP, thus I try to keep healthy “bites” in the fridge at all times. Since I run a lot, I need some protein for after workouts, so peanut butter and chia seeds are a great combo. Chia seeds are a great source of healthy omega fats, protein, and fiber. They are also rich in potassium. These help give me energy to get through those kid filled days too.
I added some carob powder to give them a chocolatey flavor, and I had to add coconut!! They take minutes to make and you have a snack for weeks. I’ve done them without the carob powder as well, or if you don’t have carob powder just use cocoa powder.
Ingredients:
- 2 cups peanut butter
- 1 cup rolled oats
- 1/2 cup shredded coconut
- 2 tbs chia seeds
- 2 tbs carob powder (optional)
- 3 tbs honey (optional)
Directions: Combine all ingredients in medium mixing bowl, stirring well. Make sure all ingredients are well mixed. Shape into round balls and put in air tight container, and cool in fridge for an hour before eating. Store in fridge for up to a month or freezer. Go kick some butt!!
Servings: 24-26 bites, depending on how big your bites are 🙂
