Monday is a poppin’ ya’ll!! Lets continue the popping with a great new popcorn recipe. Okay, so I am a bit corny, but I have had a bowl of this popcorn almost every night in the past week. I’ve been a a hip-hopping, popping mama. 😉
As part of my collaboration with Barleans I received some popcorn, organic and non-GMO of course, some more Barleans buttered flavored coconut oil, and this amazing popcorn maker from Lekue. You know I don’t like microwave popcorn, because of the possible carcinogens and the toxins used in the processing. We actually didn’t even own a microwave until this January. I bought one only for some new winter running gloves that have gel packs. It sits in our basement in the laundry room and has only been used for my gloves.
That was until I received the Lekue pop corn maker. It’s a silicon popcorn maker, fits up to 10 cups of popped popcorn, it’s collapsible and dishwasher and microwave safe. No harmful toxins and chemical liners and easy to use. Simply add in the popcorn and pop in the microwave for 2-3 minutes, then add your favorite toppings. Now you can have easy, healthy popcorn made in the microwave with any flavors you desire.
You have to try my Thai Peanut Popcorn. I love curry and coconut, so I enjoy a Thai coconut popcorn, or as you may know the Bollywood flavor of popcorn. I wanted a new flavor that still used curry, because of all the healthy benefits in curry and the taste. Of course I would chose peanut butter. I love peanut butter and I love Thai food. Phad Thai is ah-mazingly good. I thought I would give Thai Peanut Popcorn a try and the first go, the whole family loved it.
It’s simply to make, healthy and you even add a bit of protein from the peanut butter, with some antioxidants from the curry spice. 5 ingredients is all you need. You’ll love having a Thai Peanut bowl of popcorn as a healthy snack. Popcorn is a low calorie snack and a great source of fiber. When you chose the right toppings, you can have a great low-calorie, high fiber, savory snack.
The Buttered Flavored Coconut Oil from Barleans is vegan, non-GMO, organic and a great source of MCT’s (medium-chain triglycerides). MCT’s are converted to energy rather than fat, which is common in most all other saturated fats. Coconut oil has anti-bacterial, anti-viral and anti-fungal properties, so since the sinus infection bug hit our house I thought it was a good excuse to make popcorn every night. It’s just like butter. I use it in place of butter in many different recipes, and so naturally it would top my popcorn, to make it healthier and even more satisfying.
Pop, melt oil, stir in spices, pour over popped corn, eat & repeat!! 5 minutes, 5 ingredients, healthy benefits. So Pop, Melt, Stir, Pour, Eat & Repeat. Say it again now……
- ⅓ c Popcorn Kernels
- 3 Tbs Barleans Buttered Flavored Coconut Oil
- 1 tsp Salt
- 1 Tbs Powdered Peanut Butter, such as PB Fit
- 1-2 Tsp Curry Spice
- Add your pop corn kernels to the Lekue, stove top or other popcorn machine and make according to packaging directions.
- Melt the barleans buttered flavored coconut oil in a microwave safe bowl or over the stove top. Add in the salt, curry and powdered peanut butter and whisk until combined.
- Once popcorn is done, pour coconut oil and spice mixture over popcorn and toss to thoroughly combine.
- Enjoy

*You don’t have to use a Lekue popcorn maker to make this recipe, you can also use the stove top or another pop corn maker. I have also tried various brands of popcorn and I have found that the Jolly Time organic, non-GMO popcorn works best, along with organic popcorn in the bulk section of your grocery store.

This sounds amazing! I am always so quick to go for the Kettle corn that putting spice on popcorn was something that never crossed my mind, but now that you’ve made this, all I want to do is try it!
