Vegan Poppyseed Dressing

I love an easy dressing, especially when I don’t want to spend money on store brand dressings, which can be pricey when going organic. Most dressings for salads can be made from home with a few common ingredients.

I used to love a strawberry poppyseed salad. My mom would make the best. Poppyseed dressing can be high in fat and sugar, thus I go for an easy homemade version, so I can control the sugar amount.  For this particular dressing I use a vegenaise instead of mayonnaise. It’s a simple dressing that keeps in the fridge for a few weeks.

Vegan Poppyseed Dressing, a reduced sugar and fat recipe

All you’ll need is:

  • Vegenaise
  • Apple Cider Vinegar
  • Poppyseeds
  • Dijon Mustard
  • Agave or Honey
  • Salt and pepper to taste

Vegan Poppyseed Dressing, great for salads or as a sandwich spread

If you have a few minutes, you can make this and use it on Kale salads, a strawberry mixed green salad, mixed greens with argula salad, or even on a sandwich. I made a kale sandwich with tomato and used this dressing for my spread and it tasted amazing.

Vegan Poppyseed Dressing

Serves: about 6 ounces
 
An reduced sugar and fat dressing great on salads and sandwiches.
Ingredients
  • ¼ c + 1 Tbs vegenaise
  • 2 Tbs apple cider vinegar
  • 1 tsp dijon mustard
  • 1-2 tsp agave or honey
  • 2 tsp Poppyseeds
  • Salt and pepper to taste.
Instructions
  1. In small bowl, combine all ingredients except for poppyseeds and stir until well mixed.
  2. Stir in poppyseeds, and season with salt and pepper.
  3. Pour some over your favorite salad and Enoy.
  4. Store in air tight container and keep in fridge for up to 2-3 weeks.

I will be spending my weekend cleaning house and getting ready for a friend who is coming into town. Kind of dreading my 20 mile run this weekend, but at least it will be cooler then the recent days.

Keeping my post short and sweet today, so I can go full steam ahead on chores and emails. Oh and I finally received my diploma in the mail making it official!! I almost feel tempted to end every signature with M.S. after my name. 😉
