Now that the cats out of the bag, I can share this wonderful recipe.
I was waiting until after I announced my pregnancy, because these little gems became a lifesaver during the early part of my pregnancy. The ginger was what I needed to kick the morning sickness, which I still hate that it’s called morning sickness because it lasts ALL day and only gets worse as the day progresses. Really need to change the name.
Next week I will share my fun adventures at my first half marathon for this pregnancy at 18 weeks folks. Yes I am already over 18 weeks and we will be sharing the gender in a few weeks. Almost halfway through and I think every pregnancy only gets harder to wait. You think I would learn patience, but it’s been just the opposite. It feels like this pregnancy is actually dragging on, and I am already to meet the little bean!! Maybe because I feel a lot bigger than I did with R & L.
But lets begin munching shall we?!
You don’t have to be pregnant or female to enjoy these little wonders. I promise, they’ll hit the spot, even if you aren’t nauseous. I am wanting another batch!! The best part is they are only 4 ingredients and super easy. Why wouldn’t they be? I am a time pressed mom with two very busy children, so I rarely spend hours at one time in the kitchen. Unless it’s food prep day or a special occasion.
No nut butters to contend with either, and sweetened with a nice natural sugar, dates. You won’t get more whole foods than these. 😉 They will keep for 2 weeks in your refrigerator and you may want to hide them from others, or they will be gone sooner. I love the gentle kick of ginger. Just enough spice to keep my nausea at bay and consequently my husband. He’s not a ginger fan, so he didn’t devour these like my other energy bite recipes. I wasn’t heartbroken by this either 😉
- ½ c rolled oats
- 1 c cashews
- 1 c pitted dates
- 1-2 tsp ground ginger
- Pulse oats and cashews in food processor until they form a flour like mixture.
- Add the dates and ginger to food processor and process until a sticky dough forms.
- Roll dough into bite size balls (may need a little water to help this process) and let set in the refrigerator for 1 hour. Or consume right away.
- Store in air tight container for 1-2 weeks in the refrigerator.
