Greened Smoothies: Mango Cucumber, Blueberry Coconut, and Green Peach

Happy Monday!!

Here are some smoothies to get you through the week. I have times of craving something cold after my runs, even when it’s bone chilling cold outside. I go through smoothie crazes. Ever since after my wedding I have been on one of those crazes.

I wanted to share three of my top smoothie variations I have made in the past month and a half. Feel free to add protein powders and ground flaxseed to any of these smoothies for some added protein and nutritional boosts. And feel free to be creative with your own blends. You’ll notice how coconut makes an appearance in two of these recipes.

Blueberry Coconut Smoothie

Ingredients: 

  • 1/2 or 1 small cucumber, peeled and quartered
  • 1 1/2 cup blueberries, fresh or frozen
  • 1/2 frozen banana
  • 3/4-1 cup coconut water
  • 1 Tbs shredded coconut
  • 2 Tbs ground flaxseed
  • 2 handfuls of spinach
  • Ice cubes for thickening (optional, I like mine more thick)

Directions: Add all ingredients except spinach in your Vita-Mix or blender and blend until smooth. Add spinach and blend until broken up. Enjoy.

Green Mango Coconut Smoothie (my favorite)

This is best when cucumbers are in season!! Definitely great during late summer. It’s my island getaway smoothie!! It will transport you to somewhere warm any time of year!! 🙂 Perfect for winter and it is slimming. With lime, cucumbers, spinach or other greens and coconut water. Perfect for adding in electrolytes and important minerals.

Drink up to your health. Green smoothies don’t have to taste bad. In fact, they rarely do in my household and there’s so many health benefits. I can feel the good they do for my body while drinking them. All those vital minerals and nutrients, and the antioxidants.

Ingredients: 

  • 1 small or 1/2 medium cucumber, peeled and quartered
  • 1 fresh mango, peeled and pitted or 1 cup diced frozen mango
  • 1/2 lime, peeled
  • 3/4 cup coconut water
  • 1 Tbs shredded coconut
  • 2 handfuls spinach
  • Ice cubes to thicken (optional)

Directions: Combine all ingredients except spinach in blender and blend until smooth. Add spinach and blend until broken up. Pour you and a friend a glass and enjoy!!

Servings: 2

Green Peach Smoothie

I love adding peanut butter to smoothies. It’s a source of protein and is great for after working out to replenish calories and muscles. This recipe is simple with peaches, green mix, protein powder, milk and peanut butter. That is all I add.

Yep it’s that simple folks and tastes amazing!! I crave this smoothie frequently throughout the year and ration off my frozen peaches. We have a freezer full of frozen berries and other fruits from preserving in the summer, so I can enjoy a peach smoothie even when peaches are out of season. It has a sweet, peanut buttery taste, but it’s not overpowering and you don’t even taste the greens. Greens are only there for looks right? 😉

Ingredients: 

  • 1 1/2 c almond milk (may need more depending on how thick you like your smoothies)
  • 1 1/2-2 c frozen peaches
  • 2 handfuls spinach or power green mix
  • 1-2 scoops of protein powder (preferably vanilla flavored or plain)
  • 1 -2 Tbs peanut butter

Directions: Blend all ingredients together in blender. Enjoy!!

Servings: 2
