Well I can honestly say that I had been missing out!! I didn’t know what blueberry would taste like in energy or protein bites. It just didn’t seem like a good pair to me, blueberry and peanut butter?
My little girl inspired this recipe, because she loves blueberries. She always wants them. I don’t keep them around when they are out of season, because I try to stock my fridge with local or in season produce, so berries aren’t around for more than a few months, unless we dip into the freezer full of frozen berries from last seasons picking that I preserve each year.
So, I had been getting R some dried blueberries. She likes them in her oatmeal and she wanted blueberry cookies. I told her we could make some blueberry energy bites and she replied “Yea!!!! Blueberry bites, yea!!!!” She gets just as excited about energy bites or protein bites as I do. Thankfully they are almost full proof by now, and I can whip up random flavors in a matter of 10 minutes, guaranteed the mix will taste great.
What makes these energy bites? Well I added in some maca root powder. No one even noticed it was there, and it will help to give me a boost to get through the day with 2 kids two and under, as well as increase stamina in my workouts. Maca also has some vitamins and minerals crucial to our overall health, such as some B vitamins, vitamin C and minerals such as iron, calcium and magnesium. It’s great for balancing hormones too, and as a mother I need all the balance I can get 😉
You’ll get a chewy, sweet flavor and another nutritional boost with chia seeds and ground flaxseed. I sweetened with honey, but the dried blueberries would probably be enough. I think it may be one of my favorite bite flavors now, and one I will keep in rotation. So, a big thank you to R for inspiring this recipe.
These bites more remind me of a cookie dough bite. And of course, I made them gluten free and dairy free. You can also make them entirely vegan using maple syrup or agave to sweeten them instead of the honey.
Better yet, you’ll only need 7 ingredients and only 10 minutes, and you’ll have enough snack for a few days for the whole family. Best kept in the refrigerator.
- ¾ c nut butter
- ¼ c ground flaxseed
- ¾ c oats
- ½ c dried blueberries
- 1 Tbs chia seeds
- 1 -2 Tbs Maca root powder
- ⅛-1/4 c honey, maple syrup or agave
- Place all ingredients in a bowl, medium sized, and stir until well combined.
- May need to add a little water to form balls (I didn't have to)
- Form balls/bites out of prepared mixture by rolling between palms.
- Enjoy & store in the refrigerator for 7-10 days.

This has been a long week it seems and I am back to studying again, with my nose in a textbook whenever I have the time to sneak it in. I am working on another certification to hopefully broaden my scope of practice. We will see. There’s movements I question, why am I doing school all over again? Is this worth it and how am I even finding time for it? Thankfully, I love learning.
One thing is for sure, I am trying to keep our meals nutritious and healthy snacks on hand and stocked, but I have also learned to make room for those nights when cooking just isn’t an option nor something I have any time for. Oh and in a few weeks, I have some news to share on the blog and a few changes coming your way. As if my life isn’t changing fast enough and moving fast enough. I have learned to give it all to God, in every season there’s grace, and in this season there’s been an outpouring of His Grace!!
