We are sharing a favorite breakfast among our families and even kiddos. These are great for the athletes, moms, dads, kids and the single folk or college folk. This is a recipe that we love to make!! The green color gives it a fun twist for the kids, and they don’t even realize that spinach is an ingredient.
These Spinach Blender Pancakes are simple. No frills type of simple. Easy to blend and whip up within minutes. We recommend making a large batter and freezing for those weeks when you know you will have busy mornings. You can then add to the toaster or heat in the microwave (I typically avoid those) or in the oven. I love how fluffy they are and nutrition packed.
We promise the spinach is tasteless in these pancakes. These pancakes are fluffy like buttermilk pancakes, but they are vegan and grain free. I love the simple ingredients that pack a nutrition punch. You won’t need food coloring. Food coloring is something I steer clear off, because of it’s toxicity. Artificial food coloring is a dangerous additive, and it’s used in many children’s snacks, crackers, and even some juices. It can cause tumors and hypersensitivity reactions. There’s natural ways to add food coloring and it’s fairly easy to color food natural. From using beets, spinach, or berries. It’s fun and you an add a nutritional boost. Add these to your St. Paddy’s day menu or Earth day and even breakfast on special birthdays. Kids loved colored food, and using natural foods to “dye” foods is possible, without sacrificing taste.
I love that the spinach adds vitamin K, iron, vitamin A, magnesium and B vitamins to name a few. It really is a nutritional powerhouse. Even the picky eaters will be pleasantly surprised with the pancakes great taste.
Enough about how the kids will love them! You are probably wondering about your adult self. Of course you will love these and you will also reap the benefits of the vitamin and minerals they contain in your athletic performance. Add protein powder for added protein after long runs or workout sessions, and top with peanut butter or almond butter for even more protein. The oats are full of protein as well, and healthy fiber. I like to add ground flaxseed at times for EFA’s and some fiber. Stir in chocolate chips for a treat, or strawberries, blueberries and/or raspberries. Even apples are a good stir in.
Best part, you don’t have to sacrifice your New Years resolution with these. The pancakes won’t interfere with your new healthy lifestyle. Whole thirty approved, and even Paleo’s can munch on these. - 2 c oats, gf
- 1 c water or milk of choice
- 2 ripe bananas
- 2 c spinach packed
- 2 Tbs apple cider vinegar
- 2 Tbs baking powder
- 1 Tbs vanilla
- Place all ingredients in a blender and process until smooth and combined.
- Can allow the batter to sit for a few minutes to thicken.
- Pour batter onto a greased griddle or frying pan, making pancake sizes to your liking. Once batter begins to bubble & is lightly golden on one side, flip.
- Cook until lightly golden on the other side. Repeat with remaining batter.
- Enjoy topped with your favorite toppings.
