I know I have been posted a lot of recipes the past few days, but I wanted to share this before Christmas. Christmas is only 4 days away!! It’s crazy. With Christmas around the corner it means 2016 is coming to an end and we will be beginning a new year.
I don’t know whether to cry or jump for joy. 2016 was such a hard year, a year of stretching, challenges in almost all areas of my life from physically to financially. In some regards I am glad 2016 is over, and I can start afresh in 2017. A New Year with new blessings, and probably more challenges. I think every year will have challenges, but some years are worse than others.
It’s bittersweet, because with each New Year, my children are growing older. Soon they will be in school. It’s sad, but exciting. I am enjoying every moment. Then there are days I can’t wait for school!! That’s motherhood folks.
I was excited for this cauliflower dish. One because I used my cast iron pan. I love cast iron. Food just tastes better. My dad has been cooking more with cast iron and it inspired me to get my cast iron out. This used to be what they used all the time, especially growing up. Then culture moved to those gross non-stick pans, with the chemicals. Cast iron is healthy for you and makes food more flavorful. Dishes just taste better.
This dish is healthier than mashed potatoes. So if you are looking for a healthier version of potatoes this Christmas, try this “Butter” Roasted Cauliflower dish. I used butter flavored coconut oil from Barleans instead of butter. It’s literally became my new favorite food product. Butter is fine to use if you don’t have any Barleans on hand. The barleans coconut oil is a healthier option with the MCTs. You can use this product cup for cup for butter in any recipe.
This roasted cauliflower dish is faux “potatoes.” Tastes like mashed potato, and it’s easy to prepare and make. All you need is cauliflower and coconut oil or butter. Sprinkle salt and yum. I roasted in my cast iron pan for an hour and then enjoyed the whole pan!! Okay I did share with R and Marc. R love the roasted cauliflower. She kept saying “more mommy, more.”
- One Head of Cauliflower
- 6 Tbs Butter Flavored Coconut Oil or Butter
- Salt
- Preheat oven to 425 degrees.
- Cut cauliflower down, so it's just the tops of the cauliflower.
- Place cauliflower in the cast iron pan, flower side up. Top florets with some of the butter, rubbing the florets.
- Every 15 minutes, bast the florets with more butter, Bake until cauliflower is soft.
- Sprinkle with salt and enjoy.

Why not make the holidays a littler more healthy this year and easier, without losing your favorite tastes? Cauliflower is becoming a fun addition to family meals more and more. It’s great used in crusts for the gluten free folk, for rice, or as potatoes.

I enjoy celebrating the real reason of Christmas and I look back on all the amazing things God blessed me with over the past year and thanking Him for the gift of His son, the greatest gift anyone could ask for!! A gift that was freely given and didn’t cost us a thing, rather cost Him, His son. Greatest Gift!!
