Fudgy White Chocolate Mint Cookie Bites

Wellness Wednesday – I think this is my favorite day of the week! It’s always full of food, health and wholeness. And if I am honest, Friday is a pretty great day too!

I am interrupting your morning to bring you a midweek pick’me up. These mouth fulls will change the way you recover and fuel from workouts, as well as snack. I am all about healthy snacks, and having those snacks prepped for the week, make it easier to avoid the sugar or junk cravings, as well as the snack stash at work.

This recipe was taste tested by my children, husband and parents. I didn’t tell them the hidden secret ingredient and they would have never guessed! Before I share this easy and yummy recipe with you lets chat health!

CBD OIL – The new health craze, and I am glad it’s gaining popularity and easily accessible now, because CBD oil boasts many benefits. Before we start on the benefits of CBD oil, lets break it down and I’ll even educate you on what it is and what it isn’t, and what to look for in hemp oil products.

CBD stands for “cannabidiol” which is a compound extracted from the hemp plant. CBD is not marijuana and you will not get high from taking CBD hemp oil. Both hemp and marijuana come from the same plant, but with differences which most notably include THC. Hemp is high in CBD, but very low in THC, whereas marijuana is high in THC (the compound that makes you high) and very low in CBD.

Now for the recipe!! These mint cookie bites are gluten free, sweetened with maple syrup or honey and protein rich. Try them post workout or pre-workout. Enjoy them as an after dinner dessert to help curb those sugar cravings and give you the protein you need. Make a batch to have on hand for the weeks snacks. Try them morning, noon or night! The chocolate mint oil is delicious, smooth and creamy. Adds just the right amount of mint to the bites. You can trust these are clean! No funky taste either! Tastes amazing, you’ll find it hard not to pour in the whole bottle of chocolate mint CBD Oil or eat the whole batch of cookie bites.

Fudgey White Chocolate Mint Cookie Bites

Time: 5-10 minutes

Ingredients

  • 1/2 c peanut butter, crunchy or creamy (or almond butter)
  • 1/4 c maple syrup or honey
  • 1/2 c + 1-2 Tbs oat flour
  • 1 1/2 – 2 scoops chocolate protein powder (I use Orgain)
  • 1 Tbs Barleans CBD Hemp Oil, Chocolate Mint
  • 1/4 c white chocolate chips
  • milk or water to form dough, if crumbly

Directions:  1. Combine peanut butter (nut butter) and maple syrup (or honey) and stir until well combined in medium mixing bowl. 2. Stir in oat flour and chocolate protein powder, mix until well combined. 3. Mix in Barleans CBD Hemp Oil, chocolate mint. 4. Finally, stir in white chocolate chips. If dough is crumbly, add a little water or milk to help form bites. 5. Form bite sized bites by rolling dough. Place in air tight container and keep in refrigerator for up to 2 weeks.

Servings: 18-21 cookie dough bites
