Hi friends!! It has been a while since I wrote a blog post. With work and triathlon training, I barely have time to sleep. I guess I should clarify I need a minimum of 8-9 hours of sleep to function. Yes, I love sleep, and I am not ashamed of it. Honestly, you should all adopt a page out of my book and try it for yourself 😉
About two months ago I posted the “Key Foods Necessary In An Athlete’s Diet.” Well, I am finally fulfilling my promise to follow up on the post by writing about my favorite recipes. Luckily, @wholesomelybry (my sister and fellow editor Bryanna) has tons of recipes that are packed with powerhouse ingredients and are delicious!! There are so many amazing recipes to choose from on the blog, but I have managed to condense my list down. I also included my favorite snacks, because we can all use a midday pick-me-up.
Breakfast
I don’t need to remind you all why breakfast is important. I will save you the lecturing. Here are my favorite breakfast recipes: Spinach Blender Pancakes, Vegan Chocolate Zucchini Pancakes, Sweet Potato Toast, Coconut Sweet Potato Breakfast Bake, Matcha Green Tea Smoothie, Pumpkin Pie Spiced Chocolate Avocado Smoothie, Marc’s Greek Omelet (I add beef to my omelete). Bryanna was nice enough to name the last recipe after her husband. I guess I am not special enough to have a recipe named after me. Not cool! I am going to petition. 😉
Lunch/Dinner
@Wholesomelybry recipes for lunch and dinner are titled under “Main Dishes/Sides.” If you are a meat-eater, vegetarian, vegan, or gluten-free, you can amend some of the recipes to satisfy your dietary restrictions. Some of my favorite recipes, like the Peanut Curry Rice & Sweet Potato Bowl, Vegan Spicy Tofu Fried Rice, and the Spinach and Avocado Stuffed Sweet Potato have a vegan and vegetarian option and are gluten-free! I also love the Creamy Garlic Sweet Potato Au Gratin and Vegan Veggie Mac’n’ Cheese Bake which are both gluten-free and vegan-friendly. If you like “real” cheese like my husband there is no need to worry. Many of the recipes on the blog can be made with, as my husband calls it, “real” cheese.
Snacks
Honestly, I like all the snacks on the blog, but here is a list of my “can’t live without” snacks. Okay, maybe I am being over dramatic. Once you give them a try though, you may understand where I am coming from. Here is my list: Matcha Green Tea Protein Bites, Tart Cherry White Chocolate Cookie Dough Bites, Chocolate Coconut Macaroons, Chocolate Peanut Butter Protein Bars, and Pumpkin Hot Cocoa. The Pumpkin Hot Cocoa really warms the soul and is the perfect drink to get you in the holiday spirit. I already discussed my favorite snacks a while ago, so this list may look a little different. These are my “current” favorites. It tends to change frequently.
On my instagram, you will find several videos that include some of the recipes listed above. There will be more to come too! 😉 I will also post holiday-themed recipe videos. By the end of the year, you will be begging me to cook for you. I can imagine my sister laughing right now, because I often rely on her cooking expertise. Don’t worry though, I make cooking fun, and if we run into a problem she is only a phone call away. 🙂
